Yankee Cheesecake Co. was born out of a passion for timeless, scratch-baked desserts and a journey from the East Coast to America’s Dairyland. Founded by baker and Fort Atkinson resident Derek Barsaleau, our boutique bakery bridges classic New England heritage with the unmatched quality of local Midwestern agriculture.
We believe that a truly elite cheesecake cannot be mass-produced, frozen, or filled with artificial fillers. That is why every single product that leaves our kitchen is mixed, baked, and finished by hand using a dense, traditional New York-style base and a rich, golden butter crust.
